Steak Bites and Eggs
Serves: 2
Ingredients
8 oz steak (ribeye, sirloin, or your choice), cut into bite-sized pieces
Salt and pepper, to taste
1–2 tbsp olive oil or butter
4 large eggs
1 clove garlic, minced (optional)
1 tsp fresh thyme or rosemary (optional)
Chopped parsley for garnish (optional)
Instructions
Prepare the steak bites:
Season steak pieces generously with salt and pepper.
Heat olive oil or butter in a skillet over medium-high heat.
Cook steak bites:
Add steak bites to the skillet in a single layer (don’t overcrowd).
Sear for 2–3 minutes per side for medium-rare, or longer for desired doneness.
Optional: add garlic and herbs in the last minute of cooking for extra flavor.
Remove steak from skillet and set aside, tented with foil to keep warm.
Cook the eggs:
In the same skillet, reduce heat to medium.
Cook eggs your preferred way: fried, scrambled, or sunny-side up.
Serve:
Plate the steak bites and top or serve alongside eggs.
Garnish with fresh parsley if desired.
Tips:
Use high heat for a good sear on the steak without overcooking.
You can add sautéed mushrooms or onions for extra flavor.
Pair with toast, avocado, or roasted potatoes for a complete meal.
If you want, I can also give a one-skillet version where the steak and eggs cook together for minimal cleanup. Do you want that version?
