Biscuits and Gravy Recipe

Ingredients

For the Biscuits
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon salt
• 6 tablespoons cold butter, cubed
• 3/4 cup cold milk (or buttermilk)

For the Sausage Gravy
• 1/2 pound (225 g) breakfast sausage
• 2 tablespoons butter (optional if sausage isn’t fatty)
• 3 tablespoons all-purpose flour
• 2 cups milk
• 1/2 teaspoon salt (adjust to taste)
• 1/2 teaspoon black pepper
• Optional: a pinch of paprika or chili flakes

Instructions

  1. Make the Biscuits
    1. Preheat oven to 220°C (425°F).
    2. In a bowl, mix flour, baking powder, and salt.
    3. Add cold butter and rub it into the flour until it looks like coarse crumbs.
    4. Add milk and mix until a soft dough forms.
    5. Place dough on a floured surface, gently flatten it to about 2 cm (¾ inch) thick.
    6. Cut biscuits using a round cutter or a glass.
    7. Place on a baking tray and bake for 12–15 minutes, until golden.

  1. Make the Sausage Gravy
    1. In a pan, cook the sausage over medium heat, breaking it into small pieces.
    2. If there is too little fat, add the butter.
    3. Sprinkle the flour over the sausage and mix well to coat.
    4. Cook for 1 minute.
    5. Slowly pour in the milk while stirring constantly.
    6. Let it simmer until thick (about 3–5 minutes).
    7. Season with salt and black pepper.

  1. Serve
    • Split the warm biscuits in half.
    • Spoon the hot sausage gravy on top.
    • Serve immediately.
