Ingredients
For the Biscuits
• 2 cups all-purpose flour
• 1 tablespoon baking powder
• 1 teaspoon salt
• 6 tablespoons cold butter, cubed
• 3/4 cup cold milk (or buttermilk)
For the Sausage Gravy
• 1/2 pound (225 g) breakfast sausage
• 2 tablespoons butter (optional if sausage isn’t fatty)
• 3 tablespoons all-purpose flour
• 2 cups milk
• 1/2 teaspoon salt (adjust to taste)
• 1/2 teaspoon black pepper
• Optional: a pinch of paprika or chili flakes

Instructions
- Make the Biscuits
- Preheat oven to 220°C (425°F).
- In a bowl, mix flour, baking powder, and salt.
- Add cold butter and rub it into the flour until it looks like coarse crumbs.
- Add milk and mix until a soft dough forms.
- Place dough on a floured surface, gently flatten it to about 2 cm (¾ inch) thick.
- Cut biscuits using a round cutter or a glass.
- Place on a baking tray and bake for 12–15 minutes, until golden.

- Make the Sausage Gravy
- In a pan, cook the sausage over medium heat, breaking it into small pieces.
- If there is too little fat, add the butter.
- Sprinkle the flour over the sausage and mix well to coat.
- Cook for 1 minute.
- Slowly pour in the milk while stirring constantly.
- Let it simmer until thick (about 3–5 minutes).
- Season with salt and black pepper.
